Grapefruit and avocado? Together?
Sounds like a weird combination, but I was pleasantly surprised. The juicy tartness of grapefruit complements the smooth mildness of avocado in this refreshing summer salad.
Peel a grapefruit, making sure to remove all the pith and white-cellophany stuff. Slice an avocado. Arrange the grapefruit slices until they look nice, or simply toss the pieces together. I was perfectly happy with a little salt and pepper sprinkled on top, but you might try tossing the salad with a generous amount of olive oil and a squeeze of lemon juice or a dash of your favorite vinegar with olive oil. Season with salt and pepper to taste.
This can serve as a salad in itself, a topping on a normal salad, or a refreshing appetizer.
