Easy Peasy Pea Soup….har dee har harr. Aren’t I clever?
This soup really is easy. It’s usually what I turn to when I want a satisfying, light soup with minimal effort.
Boil fresh or frozen peas in water or broth. If you want a thicker soup (as I usually do), add less water…about the same level as the peas. For a thinner soup, cover the peas with about 1 inch/2.5 cm of broth or water (or to your taste…you’re gonna eat it, after all!). Season with a few hearty pinches of curry powder per serving, pepper, and salt. Puree and add in chunks of ham if you’re feeling it. Or leave as is! It’s up to you, dear eater. For the final touch, stir in a dollop of crème fraîche or sour cream. For a richer taste, stir in a spoonful of whipping cream instead.
This is great as a starter, a side served with a fresh salad, or as a satisfying main with bread and butter.
